Triple Sesame White Bean Dip with Roasted Butternut

Can we just eat hummus for dinner and call it a day? Cool? Ok.

Because even though it might be Monday, I just have no desire to whip up something super fancy. This is definitely how I want my Monday to go down. A big bowl of hummus with some roasted squash, a big piece of fluffy pita, and maybe a glass of wine? Maybe two?

Hey, it is a Monday! And this definitely cancels out the donut I ate this weekend.

Saag Paneer Pizza

Can you tell I am on a palak paneer kick? Actually I always am on a palak paneer kick!

Indian spices are my FAV. Cheese is my fav. Carbs are my fav. So when I can merge all three together, I’m def going to do it! This is the perfect thing to eat on a Monday. I mean, think about it. The work week can be so intimidating. And even by Monday night, I am incredibly exhausted. Luckily, for you and for me and for this world, we have a quick and easy pizza for those days. And it is DAMN good, you guys.

I’m seriously convinced that pizza is the manna that God was talking about.

Now, today I will not be talking about the bug that you catch when you are sick. Those are the bad kinds. You know, the ones you have been over the toilet for for three days because you ate some sushi that probably should come nowhere NEAR your body. Can we talk about how all food poisoning stories are about SUSHI. Aka the most delicious food on the planet. Seriously why is it always the tastiest things are potentially the most lethal.

Apple Cinnamon Overnight Oats

Heeyyyyy Ya!

Did I get that Outkast song stuck in your head now? For me, it’s been 3 days that I have been shaking like a poloroid picture and I cannot STOP. Isn’t that the most annoying thing ever? Trust me, there are some mornings when the song that is currently the alarm on my phone will not leave my head for the entire duration of the day. The worst is when the song is so stuck in your head that you stark lip-singing the words to the song. And totally not even notice. There may even be some slight shaking of the bum, which makes the whole experience for others even more terrifying. Cause then everyone you pass begins to think you are a freak mumbling to yourself like in the exorcist.

Vegan Palak Paneer

Who said the healthiest recipes had to be salad? Seriously?

Because, you guys, we are heading into the home stretch of winter! And I know you are struggling to keep up with those New Year’s resolutions that you cannot bear to have another plate of cold vegetables. Let’s be real, the saddest thing to be ever said about a meal is it is another plate of cold vegetables.

Cutting Out Sugar/Wheatberry Porridge with Runny Eggs

Did you y’all realize I used to be a sugar ADDICT?

I mean I still kind of am. BUT I am working on it. When I was a kid, I used to hoard sweets and candy in my room (sorry to my mother who did not know this. Ha!). Reese’s cups were my drug of choice.  I was so content to have a muffin or a donut for breakfast, and, even in college, my go to was a highly sweet yogurt with just as sugary granola. I usually would crave chocolate after every meal. And I was not just satisfied with a whole piece. I needed a whole bar.

You heard that right friends. A whole freaking bar.
