Sesame Coconut Granola

I am having a HUGE granola moment right now!

In fact, it’s so huge that as I type this, I’m finishing off a bag with some yogurt and strawberries and cashew milk. And by a bag, I mean a giant cluster that I am meticulously breaking off small pieces of to savor. I just do not want this granola fantasy to end.

Miso Oatmeal with Charred Snap Peas

Childhood meant one thing. And that thing was apple cinnamon oatmeal packets.

When I was a kid, I would bring on all of the sugar into my breakfasts. There was sugar and cinnamon on buttered toast. There was the key lime pie Yoplait with crushed up graham crackers (still one of my favorites). My ultimate favorite breakfast, though, were those apple cinnamon oatmeal packets. I know that was usually the packet on the bottom of the variety pack, but I cannot help that they were my very favorite.

It’s ok. I’ll take them off of your hands.

Seared Breakfast Banana Split with Biscuit Crumble

Aka how I have fully embraced having dessert as breakfast. Or hey, what about breakfast as dessert? With Mother’s Day coming up and everything, I was looking for a recipe that was a) relatively low maintenance, b) reasonably good for you, and c) so decadent she would not be able to tell the difference between this and dessert ! And I think I’ve nailed it.

Because, while this is a banana split, if you squint, it looks like breakfast!

Buckwheat Banana Pancakes

These pancakes are a bit life changing.

I know I’ve touched on this before, but like, I am obsessed with breakfast food. No joke. I want all the breakfast foods, sweet or savory, all the time. Eggs, pancakes, waffles, hash. You say the words and I am SO. GAME. What makes that hard is most breakfast food is hard to take to work, ya know? And I am at work for a considerable portion of my week. So even if I want breakfast food for lunch (aka, that is most days) it is damn near impossible to make my dreams a reality.

Soaked Coconut Quinoa Porridge

There’s something so comforting about the word porridge, right? Even if it is 90 degrees outside?

I mean, the word porridge just feels nourishing, right? Much more than warmed quinoa breakfast, am I right? And even as summer begins to poke over the horizon (thank GOODNESS) I still want that comfort that a warm bowl of porridge provides.

Then again, I am the kind of person who drinks hot coffee all year round

Aww yeah it is pizza time!

Isn’t pizza day the best day of the week? Friday was usually my family’s pizza day. My mom was too tired to cook by the end of the week, so we would call what I still think is the BEST pizza in the country (that’s right, in little old South Jersey I have found pizza that absolutely crushes any pie I’ve had in NYC) But hey, I’m all about not limiting pizza Friday to just Friday. Actually you know what the best day of the week would be for pizza day? How about everyday!

Triple Coconut Overnight Oats

I used to be that kid. You know, the one who hated coconut everything.

You would never know that from the 23 (almost 24. I can’t believe I am that old) year old me. Now, I love coconut flavored everything. I lather myself up with coconut oil every chance I get. I always add coconut milk to my curries. Coconut is usually my number one option for chocolate/ice cream mix ins/skin options. I coconut oil the ends of my hair. Gosh, where would I be without coconut?

And do not even get me started on coconut butter.

I bring you sunshine in a dish.

And I know that ANYONE would be totally down with eating something that has the title of SUNSHINE in a dish, don’t you. How could this possible be bad right? After a season of grain bowls and polenta, I am TOTALLY down with eating my greens.
