Buckwheat is definitely the sexiest form of pancake.
I know because I’ve had them all. I am very particular about the pancakes I consume. My dad every Saturday would make stacks and stacks of buckwheat pancakes. I loved going downstairs and eating a huge stack. Then, I might follow that up with a pancake chaser/snack sometime in the afternoon. And then of course, there were the pancakes that I would take in a Ziploc bag to lunch at school. I would eat them cold, smeared with peanut butter.
I was living my best life, even at 8.

I made you a dessert recipe. In January. It’s true.
Don’t worry though, I made these healthy…ish. They are totally healthy January approved, at least in my book anyway!
Plus, it’s Monday, and we all need a little something sweet to celebrate making it through our first week of 2018.
And yes. I did write 2015, then 2017, before finally settling on 2018. Jeez louise.

How is it December, the END of December, and I have baked ZERO things?
Oh sure, I can use my graduate apps and my and just all around adulating to blame for my lack of time cozied up to my oven, but that would just be excuses. If y’all did not know, I used to be a baking FIEND. In high school, I pretty much baked every weekend. Some standout were Smitten Kitchen’s gingersnaps and a clearly not gluten-free/paleo/vegan banana bread recipe from the back of a Land o’ Lakes box. And regard of what healthified recipe I would give to my parents or siblings, they would still just want the banana bread from “the back of the box.”
At least they were easy to please!

It has been a long time coming, but I am coming to you with some VERY important information.
Now, as a vegetarian, I eat a TON of eggs. It Is very rare that I do not have eggs at least once a day. And, truth be told, I probably would eat them for almost any meal, if given the chance. On salads. Scrambled. For breakfast. It is so weird to me that I used to HATE eggs. Like truly hate them. The taste and the texture reminded me of that time my brother poured about half of a bottle of maple syrup over my eggs and I still ate them.
But honestly, that much cold maple syrup and warm eggs would make anyone gag.

I do not eat oatmeal enough. And to be honest, that is a real shame.
I always get in breakfast funks. And it is not predictable about what kind of funk I will be in when. All I know is that 1) I will eat a breakfast item nonstop for about 2-3 weeks without getting tired of it. And 2) almost spontaneously, I will get sick of said food and have to relinquish it from my life for maybe six months.
Yeah, the results are pretty tragic.

And yes, a BALT is a BLT with avo. And it should totally not be optional.
I mean, bacon is bacon…it comes from a pig…it’s bacon. And to be honest, I think it’s a little overhyped.
Now, I liked bacon as a kid… well because we did not have pork in our house, it was mostly turkey bacon. But I always looked forward to summertime, when the tomatoes from our garden are so juicy, they are about to burst. That meant my mom popping out BLT sandwiches like it was no one’s business. We would bake bacon in the oven (the crisp factor is INSANE), and make sandwiches of the juicy tomato, bacon, lettuce, and real deal mayonaise.
I do not think there is anything better in summertime. Maybe ice cream. MAYBE. Continue reading “Vegan (minus that egg!) BALT Breakfast Salad”
Breakfasts for me used to always be sweet. Maybe because I am such a sweetie.
I definitely inherited my mother’s sweet tooth, because I always wanted pancakes, waffles, or that yogurt that is basically chocolate mousse in a cup. Do you know what I am talking about? Yoplait Whips were definitely breakfast food back in my 10 year old mind. That being said, I also love a good eggy meal…only I usually make them for lunch or dinner instead of breakfast. I dunno why, but it might have to do with the fact that I never really got into eggs until I was in college. Being a vegetarian and in need of some protein, I learned to get over my dislike of eggs. I still ate pancakes, but eggs were just such an easy option for a busy college student at 9 PM who had not eaten anything
So on weekend nights, I virtually inhaled omelets

Can ice cream count as breakfast? Why yes. Yes it can!
There is a certain sense of accomplishment when you get a day’s worth of fruits and veggies and a workout before 10 AM. And smoothies, rich and THICK smoothies, do just that. Now, if you have spent a second on Instagram, you know that the latest and greatest smoothie innovation is putting smoothies in BOWLS. And guys, I’v been doing this for years with no plans of stopping. A bowl of smoothie just makes them more meal-like, you know? Because you can just a ton of toppings on em and BAM, instead filler upper.
You might as well dump your whole pantry on here… cause I do.

Had a rough day? Eat a tostada!
That sounds like the type of logic game I would be good at. I think everyone at some point wants to go to law school. I know I did, but I failed miserably at the logic games. I think this would be the time to create some sort of food attorney position.
Because that would and could be my hopes and dreams.
