Harissa Lentil Stuffed Butternut Squash

This weather lately has got me thinking about the Mediterranean lately. Specifically how I wish I was out of the cold, DC sadness.

This weather is just a roller coaster of emotions. It is cold one day, then hot the next day, then a freaking blizzard two days later. I have been feeling so stir crazy lately, which might explain all of these crazy dreams I have been having lately. I think my unconscious is definitely playing into my desire to travel this year. Except why does my brain think it is totally normal for me to roll out of bed, onto a horse, to a flight to Japan?

I really need to get some more sleep

Yellow Split Pea Soup with Spiced Coconut

We all need a bowl of soup after this week. Who’s with me?!

It is the last Friday of 2017, which, thank goodness 2017 is OVER! And just like that the holidays are over. Hoping each and every one you had an amazing holiday season with your family. And, regardless if you celebrate or not, I hope you had a relaxing day off! 2017 was definitely a rebuilding year for me. I was taking classes, transitioning to a new job in a new city, and learning about this crazy blogging life while balancing my social life.

Balance is one way to put it.

Power Lunch Bowls with Green Goddess Dressing

It’s safe to say that I freaking LOVE lunch!

Most people say breakfast is the most important meal of the day, but I personally get most excited about lunch. People who say “I was too busy, I forgot to eat lunch”… I don’t get you. I am always waiting for my clock to tick down to 1:30 PM, for me to bust out my prepacked Tupperware, and shout, “YES! LUNCH TIME!” But maybe I’m the only weirdo who eats breakfast and then immediately starts counting down the hours ’til lunch?

Anyone? Anyone at all?

Vegan (minus that egg!) BALT Breakfast Salad

And yes, a BALT is a BLT with avo. And it should totally not be optional.

I mean, bacon is bacon…it comes from a pig…it’s bacon. And to be honest, I think it’s a little overhyped.

Now, I liked bacon as a kid… well because we did not have pork in our house, it was mostly turkey bacon. But I always looked forward to summertime, when the tomatoes from our garden are so juicy, they are about to burst. That meant my mom popping out BLT sandwiches like it was no one’s business. We would bake bacon in the oven (the crisp factor is INSANE), and make sandwiches of the juicy tomato, bacon, lettuce, and real deal mayonaise.

I do not think there is anything better in summertime. Maybe ice cream. MAYBE. Continue reading “Vegan (minus that egg!) BALT Breakfast Salad”

My Go-To Formula for the Savory Breakfast Grain Bowl

Breakfasts for me used to always be sweet. Maybe because I am such a sweetie.

I definitely inherited my mother’s sweet tooth, because I always wanted pancakes, waffles, or that yogurt that is basically chocolate mousse in a cup. Do you know what I am talking about? Yoplait Whips were definitely breakfast food back in my 10 year old mind. That being said, I also love a good eggy meal…only I usually make them for lunch or dinner instead of breakfast. I dunno why, but it might have to do with the fact that I never really got into eggs until I was in college. Being a vegetarian and in need of some protein, I learned to get over my dislike of eggs. I still ate pancakes, but eggs were just such an easy option for a busy college student at 9 PM who had not eaten anything

So on weekend nights, I virtually inhaled omelets

Black Bean Tostadas with Blackened Corn Salsa

This post is sponsored by Right People Foods

Had a rough day? Eat a tostada!

That sounds like the type of logic game I would be good at. I think everyone at some point wants to go to law school. I know I did, but I failed miserably at the logic games. I think this would be the time to create some sort of food attorney position.

Because that would and could be my hopes and dreams.

Stew-y Chickpeas with Tomatoes, Capers, and Grilled Halloumi

Oh hey, look, another chickpea recipe!

And it’s a recipe that just screams summer, which we all need right now because Monday is not the most summer-y day of the week. Ok ok, for real though, I feel like Mondays just require fun food, you know? Just something to push us into the thralls of the week ahead. Especially after testing some pretty dicey mango recipes yesterday and feeling like I had the ultimate sugar rush.

One might say I’m part mango now.

Roasted Eggplant “Sabich-ish” Salad

Hey yo! It’s BBQ season!

LEt’s be real, BBQ season is probably my favorite kind of season. It is the time of year when bread, cheese, grilled vegetables, and wine can come together for an acceptable sort of meal. That’s kind of why I like meals in bowls. It makes snacking feel acceptable. Plus, who doesn’t want to curl up with their snacks on the couch?

If you try dong that with a plate, I can tell you from experience it will not end well.

Marinated Feta and Roasted Red Pepper Pasta Salad

The world could use more picnics.

Picnics are the kind of things that we all wish we could have more of, but we never pursue. People think, at the end of a long day, who wants to go get all the stuff to craft a picnic. I personally am a huge believer in picnics. And it does not have to be complicated to have a picnic. Wine and cheese can always suffice as a picnic.

The key is wine is the more important of the two.
