We are learning how we can get lazy this week. And hey, that is a OK!

Because, serious question, my fellow lads and lassies. Have any of you made tamales before? I have. And they are delicious, but damn they are SO hard to make. The day that I made them, I remember spending hours wrapping the cornmeal with the corn husks and tying them together and steaming them. Yeah, that is a lot more work than I normally want to do in these cases. And honestly, the guacamole and the pico I made were winners compared to the corn tamales that took me hours to make.

So here we are, on a mission to be more lazy.

Grain Free Corn-y Grits with Quick Tomato Sauce

I love coming through for my friends. Not that I don’t do so anyway.

One of the most popular recipes I get asked about on this blog is my goat cheese polenta. It is so delicious and creamy and the perfect way to pack on a little comfort as the weather starts to chill. I have gotten a ton of e-mails about how to modify polenta for various diets. Most of the time, these changes are super easy. Vegan? No goat cheese! Gluten free? It’s naturally gluten free! But grain free or paleo? That proved a little bit difficult to come up with an instant answer.

Dal Stuffed Sweet Potatoes

It is here! It is finally here!

I know I have been promising y’all a dal recipe for some time. And I have finally got around to posting about it. I know it makes absolutely no sense for me to be posting a warm, stew-like creature of a meal during some of the hottest days we have had thus far, but I cannot help myself! It is just so rich, so filling, and yet made of wholesome ingredients.

Coconut Beans and Greens with Sriracha Cashews

I am the kind of person who craves hot coffee in 95 degree weather.

Likewise, I am the kind of person who loves a big, steaming bowl of beans even as the temperature warms up. We are in awkward times, in the beginning of April, with the temperature balmy enough to wear cutoffs one moment and then raining and dropping 40 degrees the next.

The only thing comforting in this situation is a big pile of carbs.

Roasted Carrot Soba with Miso Cashew Cream

March can be considered a tale of two months
On the one hand, there is all that beer and Irish potatoes (oh YES). Ugh seriously, I could dream about the bombardment of coconut and cinnamon Irish potatoes. And, after about 8 weeks of dieting, this is usually where a lot of people decide to forgo that protein shake for chocolate cake. Now, you might think it is bizarre that I am pushing for chocolate cake. But I like to keep it real with y’all and it can’t be any realer than a slice of molten lava cake.

Mediterranean Street Fries

What a way to wake your tastebuds. I swear. Fries before lies!

Ok maybe I am being a leetle bit dramatic, but these fries are where it is at! Over the past couple of months, I have made sweet potato fries religiously during my weekly meal prep. They are so easy and, I think, for the amount of time you put into them, they are worth WAY more than the sum of their parts.

That is like all of my favorite things. Work hard(ly), play hard. That’s what the phrase is, right?

However You Want Ahi Tuna (or Tofu!) Poke Bowl

Does the word poke remind anyone else of Pokemon?

The 90’s kid in me is praying y’all know what Pokemon is.

When I was a kid I was obsessed with Pokemon. Now, I know I have said I have been obsessed with a LOT of things on this blog. But 6-year-old Sarah would slap me silly if I did not try to covey to you the extent I was OBSESSED with Pokemon. I had everything. Cards, VHS tapes, my own Pokedex, stuffed Pokemon, video games. I even had the awesome yellow Game Boy Color that was a Pikachu Game Boy.

The nerd alert was alive and well in this case.
