My Go-To Formula for the Savory Breakfast Grain Bowl

Breakfasts for me used to always be sweet. Maybe because I am such a sweetie.

I definitely inherited my mother’s sweet tooth, because I always wanted pancakes, waffles, or that yogurt that is basically chocolate mousse in a cup. Do you know what I am talking about? Yoplait Whips were definitely breakfast food back in my 10 year old mind. That being said, I also love a good eggy meal…only I usually make them for lunch or dinner instead of breakfast. I dunno why, but it might have to do with the fact that I never really got into eggs until I was in college. Being a vegetarian and in need of some protein, I learned to get over my dislike of eggs. I still ate pancakes, but eggs were just such an easy option for a busy college student at 9 PM who had not eaten anything

So on weekend nights, I virtually inhaled omelets

Roasted Eggplant “Sabich-ish” Salad

Hey yo! It’s BBQ season!

LEt’s be real, BBQ season is probably my favorite kind of season. It is the time of year when bread, cheese, grilled vegetables, and wine can come together for an acceptable sort of meal. That’s kind of why I like meals in bowls. It makes snacking feel acceptable. Plus, who doesn’t want to curl up with their snacks on the couch?

If you try dong that with a plate, I can tell you from experience it will not end well.

Buckwheat Banana Pancakes

These pancakes are a bit life changing.

I know I’ve touched on this before, but like, I am obsessed with breakfast food. No joke. I want all the breakfast foods, sweet or savory, all the time. Eggs, pancakes, waffles, hash. You say the words and I am SO. GAME. What makes that hard is most breakfast food is hard to take to work, ya know? And I am at work for a considerable portion of my week. So even if I want breakfast food for lunch (aka, that is most days) it is damn near impossible to make my dreams a reality.

If you’ve ever had a cold fried egg, you now exactly what I am talking about.

“Are You Getting Enough Protein?”: Counting Macros

The first time someone told me that I needed more protein was from my mom. I had just come back from a weekend trip in college and was visiting my family for the holidays. My mom took one look at my hair and asked, “Are you eating enough protein? Maybe you should have some fish.”

To be fair to my mom, I probably was not getting enough protein or calories at the time. Like all trips you take in your late teens and early twenties, I was subsisting on a diet that would not be considered balanced. In this case, my team and I ate nothing but granola bars and Subway sandwiches. And because I was a pescatarian and store bought tuna salad (which is basically half mayo) FREAKS me out, my only option was the veggie delight sub with the sweet onion sauce. As you can tell, this probably has zero protein.

But you cannot say I did not get my veggies in.

Chickpea Socca with Garlick-y Kale and Pistachio Dukkah

And I know that ANYONE would be totally down with eating something that has the title of SUNSHINE in a dish, don’t you. How could this possible be bad right? After a season of grain bowls and polenta, I am TOTALLY down with eating my greens.

Indian Green Shakshuka

It’s no secret that I love my Indian spices. And eggs. Actually all of this.

Does anyone else have the problem of the “exploding spice cabinet”? I swear, every time that I open my spice cabinet, the jars of spices tumble out. I’ve always wanted to make magnetic spice rack for the surface of the refrigerator, to try and alleviate said cabinet space. But I am always the kind of person who tries desperately to be crafty and then have it end up with yarn and glitter everywhere. And like everything on Pinterest, it always ends up as a fail.

​But there are worse things than extra glitter in our lives.

Breakfast Polenta with Balsamic Beets and Runny Eggs

I mean, I can’t even with this season at the moment

It was not until today that it hit me: CHRISTMAS IS IN TWO WEEKS PEOPLE. That is so so soon. I’m kind of one of those people that the holiday season doesn’t hit me until it’s too late. I usually like to plan ahead with everything, but, especially with gifts, I always find that Christmas sneaks up on me until BOO, there it is.

And there  I go again mixing up my holidays. Seriously wasn’t Halloween a week ago.

Chickpea Breakfast Tostadas

The title of this recipe is totally misleading.

Honestly, you could eat these tostadas any time of day. Actually I prefer to have stuff with fried eggs on it for lunch. Since starting a new job and whatnot, I have been trying to figure out what types of lunches I can bring with me that will actually hold up for a couple of hours in the fridge. I was totally spoiled in my last job because I was able to go home and make lunch.

Now, I start the crusade against the not sad desk lunch.
