I love coming through for my friends. Not that I don’t do so anyway.

One of the most popular recipes I get asked about on this blog is my goat cheese polenta. It is so delicious and creamy and the perfect way to pack on a little comfort as the weather starts to chill. I have gotten a ton of e-mails about how to modify polenta for various diets. Most of the time, these changes are super easy. Vegan? No goat cheese! Gluten free? It’s naturally gluten free! But grain free or paleo? That proved a little bit difficult to come up with an instant answer.

Quick Tomato Jam

Aka how we can bottle up summer. I’m down!

The first time I had tomato jam was at Cafe Gratitude in LA. Now, I am always looking for new and interesting ways to eat my favorite foods. And a lot of times, restaurants provide a great source of inspiration. But this bowl, especially the tomato jam, absolutely blew me away.

Down the street, we’re talking. Man, is that inspiration wind strong!

Stew-y Chickpeas with Tomatoes, Capers, and Grilled Halloumi

Oh hey, look, another chickpea recipe! 

And it’s a recipe that just screams summer, which we all need right now because Monday is not the most summer-y day of the week. Ok ok, for real though, I feel like Mondays just require fun food, you know? Just something to push us into the thralls of the week ahead. Especially after testing some pretty dicey mango recipes yesterday and feeling like I had the ultimate sugar rush.

One might say I’m part mango now.

Chopped Chickpea Panzanella

Have you honestly ever seen such a pretty salad?

 It is safe to say that, even as a small child, I was obsessed with color. I know black is that color that is supposed to make you feel sleek and confident (or is that white?). I don’t know, but what I can tell you is, even now, the more neon the better. Even now, I will put a splash of neon on everything. That highlighter yellow color that many describe as “putrid”? Yup that is my favorite. I swear, I cannot resist buying anything that color.

But y’all already knew that.
