Moroccan Chickpea Stew

I know, we are at the tail end of stew season… but hear me out!

I’ve been craving all sorts of Moroccan/Mediterranean flavors lately. And, if it has not been a surprise based on the recipes from my blog, I freaking LOVE Mediterranean flavors. There is just something so fresh when you dust your bowls with half a bunch of parsley.

Spicy Kale Salad with Hummus Roasted Cauliflower

This is definitely one of those recipes.

It is one of those non-recipes that I make and casually share on Instagram (within the context of it as, hey look! This is what I’m having for dinner)” that prompts comments like “RECIPE!!!!!.” which is admittedly not my favorite style of comment. It reads like an outright demand, and since I’m super polite, I expect a “Please” or “Would you consider sharing this?” in the mix.

Eggplant Lasagna with Lentil Bolognese (V/GF)

Are you ready for this… because I most definitely am!

One of the funny memories about my childhood is I never had certain foods that I feel everyone else had. My dad loved making Indian food and homemade pizzas for us, but it was not until I was 15 that my parents ever DARED make us a lasagna. My mom said it was because we never liked it or asked for it.

But why anyone would not ask for a cheesy saucy thing is beyond me.
