Honestly, leftover rice is one of those foods that I am just always at a loss. I love rice and it never tastes quite the same after a few days in the fridge. But almost on accident, I have found a little hack that will make your rice come back to life: Ochazuke or green tea rice. It is so easy to prepare (we’re talking less than 5 minutes, but comes packed full of flavor!
Time to give those leftovers an upgrade!
Now, to give a little bit of cultural context, ochazuke or chazuke is a simple Japanese dish. You make it by pouring green tea, dashi, or hot water over rice. For many, ochazuke is a simple snack, since it is easy to make. However, for this dish, I decided to make the rice into a simple side side to spice up a dinner plate of salmon and broccoli. And y’all know I have a thing with Japanese food. Win win!
So, we should get started!
First off, you start with cooked rice. Trader Joe’s and other grocery stores make pre-cooked frozen rice, but you can also make your own (I use my Instant Pot). This recipe will work for either brown rice or white rice, short grain or long grain. I tend to use short grain brown rice because it’s the one I have on hand the most often
Next, we steep our green tea. I use the Yogi Green Tea Antioxidant Tea because I love the strong green tea flavor. Yogi Tea is my favorite tea brand because of their wellness teas with bold, tasty flavors. This particular flavor also has some other herbs blended in, including licorice and lemongrass, which make the flavors of the Ochazuke stand out!
After steeping the tea, we pour the tea over the rice and add green onion, salt, and toasted sesame seeds. By steeping the rice in tea, you eliminate the staleness that rice can get by sitting in the fridge for a couple of days. Also, I add green onions and sesame seeds to everything because the flavor is out of control
The possibilities with this rice are endless. You can eat the green tea rice as a snack (as it was intended). You can add ginger, miso, and tofu to make it into a soup for a light lunch. Heck, you can also do what I do and go ham on the toppings. Clearly, y’all know ya girl loves toppings.

- 2 cup cooked short grain rice (white or brown)
- 1 cup hot water
- 1-2 Yogi Tea Super Antioxident Green Tea bags
- 1/2 tablespoon toasted sesame seeds
- 1 scallion, thinly sliced
Add Yogi Tea tea bags to hot water and allow to steep for 5-6 minutes. Discard the tea bags.
Divide cooked rice into two bowls. Top with sesame seeds and green onion. Pour steeped green tea over the rice and serve immediately. EAT
