2020 is definitely the year of the chickpea. Or at least that is what I am declaring!

The new year always brings with it a tinge of diet culture. However, cutting foods out is not the way that I like to roll. It makes eating a balanced diet feel like a chore. Instead, I always approach the new year with ideas to ADD more foods: more veggies, more fruits!

And yes, let’s add more chickpeas

It is no surprise that ya girl S LOVES chickpeas with a passion. I honestly eat chickpeas all the time in all the forms. However, if you ever catch me without chickpeas in my pantry, then there is something wrong. Really wrong. And we must discuss.

Roasting chickpeas is probably in my top 3 favorite ways to cook them. They get nice and crispy. These Honey Sesame Roasted Chickpeas take it up a notch in the flavor department. First, they are the perfect addition to any grain bowl, salad, or perfect to eat right out of hand. Next, these babies remind me of my favorite Trader Joe’s snack: honey sesame cashews. Honestly, my mouth just waters thinking about them.

However, I will keep the drool to a minimum!

First, we start with chickpeas. Feel free to make your own or use a canned chickpea. The key to getting crispy chickpeas is making sure they are nice and dry. Give them a good pat with a dish towel (I love these). Then, roast them in a hot oven until they are crispy. It’s all about the texture.

While the chickpeas are cooking, I make the honey sesame glaze. To make the glaze, first whisk together honey, sesame oil, salt, and sesame seeds. Yeah I know… super easy! Then, pour the glaze on the baked chickpeas and, as Ru Paul says, ya gotta let it bake!

  • 2 15 ounce cans chickpeas, drained, rinsed, and patted dry (or 3 cups cooked chickpeas)
  • 1/4 cup honey (don't use raw)
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon sea salt
  • 3 tablespoons sesame seeds

Preheat oven to 420 degrees fahrenheit. Arrange the dried chickpeas on a large, rimmed metal sheet pan. Roast for 30-35 minutes until crispy.

While the chickpeas are roasting, whisk together honey, toasted sesame oil and salt.

Once the chickpeas are roasted, remove and drizzle with the honey mixture. Toss to coat. Sprinkle with the sesame seeds, stir to coat the chickpeas and place tray back into the oven for 10 more minutes or until caramelized.

Allow to cool. EAT.
