One of my favorite easy snacks or dinners to make as a kid were nachos. Now, my dad used to make them as a quick lunch or dinner on Sundays throughout the fall and winter months. He would pile the chips high with cheese and peppers and throw them in the oven. By the time we came inside, the nachos were ready for eating and enjoying the football game!

Aww yeah it is pizza time!

Isn’t pizza day the best day of the week? Friday was usually my family’s pizza day. My mom was too tired to cook by the end of the week, so we would call what I still think is the BEST pizza in the country (that’s right, in little old South Jersey I have found pizza that absolutely crushes any pie I’ve had in NYC) But hey, I’m all about not limiting pizza Friday to just Friday. Actually you know what the best day of the week would be for pizza day? How about everyday!

Almond Flour Crackers

The alternative title of this post is “how to use up all that almond pulp after making nut milk”

I have to admit, I was a little scared of making my own nut milk. I KNOW it is better for you to consume nondairy milks that do not have a lot of fillers. And I know that it is so easy/cheaper/more delicious to make your own than to buy it in the store. But I was still REALLY freaked out.

Triple Sesame White Bean Dip with Roasted Butternut

Can we just eat hummus for dinner and call it a day? Cool? Ok.

Because even though it might be Monday, I just have no desire to whip up something super fancy. This is definitely how I want my Monday to go down. A big bowl of hummus with some roasted squash, a big piece of fluffy pita, and maybe a glass of wine? Maybe two?

Mediterranean Street Fries

What a way to wake your tastebuds. I swear. Fries before lies!

Ok maybe I am being a leetle bit dramatic, but these fries are where it is at! Over the past couple of months, I have made sweet potato fries religiously during my weekly meal prep. They are so easy and, I think, for the amount of time you put into them, they are worth WAY more than the sum of their parts.

That is like all of my favorite things. Work hard(ly), play hard. That’s what the phrase is, right?
