Paleo Coconut Banana Bread

There’s really nothing I love more than food that tastes good and is pretty too. It’s not something that’s easily achievable, but in the summer months, the food is really pretty, full of colors, and delicious. I love it. Colorful bowls am I right??

However, usually when it comes to sweet things, you guys know how I do it, chocolate, chocolate and more chocolate. It’s pretty obvious though that, even lately I’ve been slowly changing my ways and incorporating more fruit based desserts into my life, I still need to have some chocolate. As you might expect however, I don’t really consider this banana bread a dessert, more like a sweet breakfast or brunch item, but I’ll let you guys decide what course you’d like to serve this with.

Double Chocolate Paleo Beet Banana Bread

Can you say that five times fast?

Don’t ask me why, but I have just never had the knack for baking. I think a lot of it has to do with being impatient and also loving to improvise. In cooking you have a lot more flexibility when it comes to tweaking recipes. A handful of capers or an extra splash of vinegar might make your recipe taste gross but it won’t throw off the chemistry.

As an aside, do not do this with baking soda. It is not the same.

Hey Fall! Long time no see?!

Labor Day is a little bit of a weird holiday. It’s a soft winded goodbye to summer, and I’ve never been good at goodbyes but, here in DC, it will still be over 100 degrees for a long while. But honestly, I am so excited for fall. Fall is, without a doubt, my favorite season of all time. The weather get cooler. The vegetables get better (and I can have both butternut squash AND tomatoes! What??) It just smells like cloves and cinnamon all the time. Or at least I like to pretend it does.

Thai Iced Tea

Channeling my role model, I had an “aha” moment this weekend.

Can you guess just from that who my role model is? That’s right. It’s Oprah. Oprah has been my spirit animal for as long as I can remember. And she has a lot of moments called “aha” moments. I remember watching Oprah with my mom, and wondering how Oprah all of a sudden would get these lightbulbs in her brain. It was as if she was an idea factory.

And if her bank account is any indicator, the factory is doing QUITE well.

Seared Breakfast Banana Split with Biscuit Crumble

Aka how I have fully embraced having dessert as breakfast. Or hey, what about breakfast as dessert? With Mother’s Day coming up and everything, I was looking for a recipe that was a) relatively low maintenance, b) reasonably good for you, and c) so decadent she would not be able to tell the difference between this and dessert ! And I think I’ve nailed it.
