I always love a pantry pasta and this Cabbage and Bowtie Pantry Pasta is one of my childhood favorites. Made with mostly pantry ingredients, it comes together in no time and tastes beyond delicious. It is vegan and GF friendly too!
This whole quarantine life and “avoiding the grocery store” has been so difficult for me. True story.
But what I will say is I am making it work. It’s forcing me to get creative with the stockpile of ingredients that I have on hand. Don’t get me wrong, I can’t wait for the day when I can go back to my spur of the moment grocery store trips. But in an effort to see things in a positive way, I’m loving my new use what you got motto.
Case in point? This pasta… yes

Keeping things comforting, but healthy with these BBQ Chickpea Stuffed Sweet Potatoes. Chickpeas are roasted until crispy and tossed in BBQ sauce. Plus, anything you put inside a sweet potato gets a yes from my dawg!
People ask me all the time what my favorite comfort foods are. The answer I give more often than not is potatoes in all of their forms. When I was a kid, comfort was going through the Wendy’s drive through to get a baked potato with broccoli and cheese. I never like burgers or meat as a kid, and this, to me, was heaven. Now, in these difficult times more than ever, I am leaning on some of my favorite comfort foods. And nothing says comfort like stuffing a sweet potato with all sorts of goodies.
Or maybe that is just me!

Spaghetti Squash with Kale Pesto Hummus might be a side dish, an appetizer, or an entree, but it is definitely a home run if you ask me! Once you try hummus on pasta (especially this hummus!) you might not go back!
Quite honestly, now that we are in the throws of December, I am looking for all the cold weather goodness that I can cozy up to a fire to. Well, not exactly if I am honest. More like I’m streaming a yule log on a television set!
Yeah, that is probably more like it.

This side dish has me WEAK. Sour Cream and Onion Smashed Potatoes are the side dish you never knew you needed!
If my six year old self could see me now, she would be so darn happy to see that I have made my favorite food, sour cream and onion potato chips, into a dinner that our mother would be proud of. Imagine that: eating chips for dinner and having society accept you for it.
Have I said too much?

If I’m being honest, I kind of feel like I’m living in 2017 with this cauliflower recipe. I used to love love LOVE cauliflower and ate it quite a bit back then. Then I took a major cauliflower hiatus, unintentional of course, and I basically… forgot about it.
Well and, as they say, the b**** is back!

I’m all for doing meals the easy way! Who is with me?
I mean, in some ways, having elaborate meals can be quite rewarding. The time and patience to create something truly delicious is a fun time in its own right. I love making things like ice cream, slow cooking stews, and chili where time and patience are vastly rewarded. But sometimes, we need things quick and easy. And nothing screams convenience like naan flatbread.
Say what? Yes, you’ve heard that right!
