Look what I made us today!
It is my new favorite quick and easy, cozy-ish summertime dinner. I know, I know. I am the kind of person who craves hot coffee in 95 degree weather.
Likewise, I am the kind of person who loves a big, steaming bowl of beans even as the temperature warms up. We are in awkward times, in the beginning of April, with the temperature balmy enough to wear cutoffs one moment and then raining and dropping 40 degrees the next.
The only thing comforting in this situation is a big pile of carbs.

It’s no secret that I love my Indian spices. And eggs. Actually all of this.
Does anyone else have the problem of the “exploding spice cabinet”? I swear, every time that I open my spice cabinet, the jars of spices tumble out. I’ve always wanted to make magnetic spice rack for the surface of the refrigerator, to try and alleviate said cabinet space. But I am always the kind of person who tries desperately to be crafty and then have it end up with yarn and glitter everywhere. And like everything on Pinterest, it always ends up as a fail.
But there are worse things than extra glitter in our lives.

Can you tell I am on a palak paneer kick? Actually I always am on a palak paneer kick!
Indian spices are my FAV. Cheese is my fav. Carbs are my fav. So when I can merge all three together, I’m def going to do it! This is the perfect thing to eat on a Monday. I mean, think about it. The work week can be so intimidating. And even by Monday night, I am incredibly exhausted. Luckily, for you and for me and for this world, we have a quick and easy pizza for those days. And it is DAMN good, you guys.

Did you y’all realize I used to be a sugar ADDICT?
I mean I still kind of am. BUT I am working on it. When I was a kid, I used to hoard sweets and candy in my room (sorry to my mother who did not know this. Ha!). Reese’s cups were my drug of choice. I was so content to have a muffin or a donut for breakfast, and, even in college, my go to was a highly sweet yogurt with just as sugary granola. I usually would crave chocolate after every meal. And I was not just satisfied with a whole piece. I needed a whole bar.
You heard that right friends. A whole freaking bar.
