Coconut Beans and Greens with Sriracha Cashews

I am the kind of person who craves hot coffee in 95 degree weather.

Likewise, I am the kind of person who loves a big, steaming bowl of beans even as the temperature warms up. We are in awkward times, in the beginning of April, with the temperature balmy enough to wear cutoffs one moment and then raining and dropping 40 degrees the next.

The only thing comforting in this situation is a big pile of carbs.

Chickpea Socca with Garlick-y Kale and Pistachio Dukkah

And I know that ANYONE would be totally down with eating something that has the title of SUNSHINE in a dish, don’t you. How could this possible be bad right? After a season of grain bowls and polenta, I am TOTALLY down with eating my greens.

Cutting Out Sugar/Wheatberry Porridge with Runny Eggs

Did you y’all realize I used to be a sugar ADDICT?

I mean I still kind of am. BUT I am working on it. When I was a kid, I used to hoard sweets and candy in my room (sorry to my mother who did not know this. Ha!). Reese’s cups were my drug of choice.  I was so content to have a muffin or a donut for breakfast, and, even in college, my go to was a highly sweet yogurt with just as sugary granola. I usually would crave chocolate after every meal. And I was not just satisfied with a whole piece. I needed a whole bar.

You heard that right friends. A whole freaking bar.

Chickpea Coconut Curry with Goat Cheese Polenta

​Let’s get out of our comfort zone. By getting into our comfort zone.

I have grown up eating Indian food for most of my life. It is pretty much my favorite thing to eat (Spicy Sarah was my nickname in high school). My dad always loved taking me to the Indian buffet for lunch in our town, when pre-vegetarian me would load up on totally authentic butter chicken (blessed be he). Even though I am vegetarian, making my own indian food (and even gobbling up Trader Joe’s Chana Masala) makes for some of my favorite meals. And for me, nothing scream comfort quite like a big old warm bowl of dahl or curry chocked full of chickpeas or lentils.

I swear I have curry powder running through my veins. My yellow tinged veins.

Breakfast Polenta with Balsamic Beets and Runny Eggs

I mean, I can’t even with this season at the moment

It was not until today that it hit me: CHRISTMAS IS IN TWO WEEKS PEOPLE. That is so so soon. I’m kind of one of those people that the holiday season doesn’t hit me until it’s too late. I usually like to plan ahead with everything, but, especially with gifts, I always find that Christmas sneaks up on me until BOO, there it is.

And there  I go again mixing up my holidays. Seriously wasn’t Halloween a week ago.
