One of my favorite easy snacks or dinners to make as a kid were nachos. Now, my dad used to make them as a quick lunch or dinner on Sundays throughout the fall and winter months. He would pile the chips high with cheese and peppers and throw them in the oven. By the time we came inside, the nachos were ready for eating and enjoying the football game!

Honey Sesame Roasted Chickpeas are the perfect healthy way to start 2020. Make them at the beginning of the week for the most delicious snack, protein source, or salad topper you have ever had!
2020 is definitely the year of the chickpea. Or at least that is what I am declaring!
The new year always brings with it a tinge of diet culture. However, cutting foods out is not the way that I like to roll. It makes eating a balanced diet feel like a chore. Instead, I always approach the new year with ideas to ADD more foods: more veggies, more fruits!

With Mother’s Day coming up and everything, I was looking for a recipe that was a) relatively low maintenance, b) reasonably good for you, and c) so decadent she would not be able to tell the difference between this and dessert ! I have to admit, I was a little scared of making my own nut milk. I KNOW it is better for you to consume nondairy milks that do not have a lot of fillers. And I know that it is so easy/cheaper/more delicious to make your own than to buy it in the store. But I was still REALLY freaked out.

Any excuse to let them eat cake, right?
And today, I feel like we just all need a slice of chocolate cake. There’s something about it that screams HUG. And we all know how much I love meals that can translate to hugs.
