Moroccan Chickpea Stew

Butternut Squash, White Bean, and Green Chile Chili

Because we need a green chile chili around these parts… say that five times fast!

I have a couple of chili recipes on this blog, mostly due to the fact that I love warm bowls of beans on cold winter nights (I mean, can you blame me?). It is the last Friday of 2017, which, thank goodness 2017 is OVER! And just like that the holidays are over. Hoping each and every one you had an amazing holiday season with your family. And, regardless if you celebrate or not, I hope you had a relaxing day off! 2017 was definitely a rebuilding year for me. I was taking classes, transitioning to a new job in a new city, and learning about this crazy blogging life while balancing my social life.

Coconut Beans and Greens with Sriracha Cashews

I am the kind of person who craves hot coffee in 95 degree weather.

Likewise, I am the kind of person who loves a big, steaming bowl of beans even as the temperature warms up. We are in awkward times, in the beginning of April, with the temperature balmy enough to wear cutoffs one moment and then raining and dropping 40 degrees the next.

The only thing comforting in this situation is a big pile of carbs.

Thai Curry Red Lentil and Sweet Potato Soup

And to that I say YES! REALLY! Soup is something I wait all year for. It is honestly one of my favorite meals in the winter. Soup and bread and a little green salad is basically all I want on a cold winter night.

Kimchi and Coconut Noodle Soup

My goal: To get you to have your coziest November EVER

Ok, ok, December too… My two favorite months because they have all my favorite foods. I spent Monday playing all the usual head games with myself. I mean, there are just not enough days in the next month and half to make all the recipes I want to make…soo many good recipes – both sweet and savory! I couldn’t choose which ones would be best so I went back and forth, back and forth, UGH.

And then I just settled on eating a butternut squash for dinner (which is never a bad choice!)
