This creamy Chickpea Coconut Tomato Soup is a delicious bowl of your childhood favorite tomato soup, with a bit of a twist. Tomatoes, coconut milk, and chickpeas are blended together to create the most creamy bowl that’s perfect for lunches or even for dinner. All it needs is some grilled cheese!
What are your favorite comfort foods?
Nothing brings me back to childhood quite like a bowl of tomato soup and some grilled cheese. I always beg my mom to crush up goldfish crackers on top because you always gotta add texture. Oh heck yes!

Feeling under the weather? This lemon ginger infused veggie soup has all of the ingredients you need to get you feeling in tip top shape. It is perfect for those cold winter months when all you want is to be nice and warm.
It’s soup season y’all! Let’s get at it!
I honestly could eat soup all day every day. It’s just one of those foods that is so cozy comforting during these cold winter months. My dad used to make one soup a week as a kid. That was as close to comfort food as you can get.
At least my version of it!

I know, we are at the tail end of stew season… but hear me out!
I’ve been craving all sorts of Moroccan/Mediterranean flavors lately. And, if it has not been a surprise based on the recipes from my blog, I freaking LOVE Mediterranean flavors. There is just something so fresh when you dust your bowls with half a bunch of parsley.
Please tell me it’s not just me.

Because we need a green chile chili around these parts… say that five times fast!
I have a couple of chili recipes on this blog, mostly due to the fact that I love warm bowls of beans on cold winter nights (I mean, can you blame me?). I love em also mostly because I can make a HUGE batch of goodness in my Instant Pot and have meals throughout the week. That means I don’t have to clean my kitchen so talk about a WIN WIN!

We all need a bowl of soup after this week. Who’s with me?!
It is the last Friday of 2017, which, thank goodness 2017 is OVER! And just like that the holidays are over. Hoping each and every one you had an amazing holiday season with your family. And, regardless if you celebrate or not, I hope you had a relaxing day off! 2017 was definitely a rebuilding year for me. I was taking classes, transitioning to a new job in a new city, and learning about this crazy blogging life while balancing my social life.
Balance is one way to put it.

I am eating this noodle bowl for L & D every day right now and I guess you could say it’s going alright. I just freaking love noods, so the idea of having coconutty goodness mixed with squashy goodness mixed with noods.
Oh yeah, get this straight up in my face.

I am the kind of person who craves hot coffee in 95 degree weather.
Likewise, I am the kind of person who loves a big, steaming bowl of beans even as the temperature warms up. We are in awkward times, in the beginning of April, with the temperature balmy enough to wear cutoffs one moment and then raining and dropping 40 degrees the next.
The only thing comforting in this situation is a big pile of carbs.

I know what you’re thinking: really, Sarah, ANOTHER soup recipe?
And to that I say YES! REALLY! Soup is something I wait all year for. It is honestly one of my favorite meals in the winter. Soup and bread and a little green salad is basically all I want on a cold winter night.
Throw in some long johns and I am set. Aren’t I super fun?

My goal: To get you to have your coziest November EVER
Ok, ok, December too… My two favorite months because they have all my favorite foods. I spent Monday playing all the usual head games with myself. I mean, there are just not enough days in the next month and half to make all the recipes I want to make…soo many good recipes – both sweet and savory! I couldn’t choose which ones would be best so I went back and forth, back and forth, UGH.
And then I just settled on eating a butternut squash for dinner (which is never a bad choice!)
