Peanut butter banana… oh I see you there, ya beauty.

Did ya know peanut butter and banana are probably my favorite flavor combination ever? Seriously I don’t know what could be better duo than that. I have a habit of eating the same things for weeks at a time. Therefore, it should come as absolutely no surprise that I ate a peanut butter and banana sandwich for lunch for a solid year as a kid.

Because we all need to be a bit basic sometimes, ya get me?

There are weeks when my brain is BURSTING with creativity. Like, I need to get these 10 recipe ideas outta me before my brain explodes, kind of creativity. That kind of week means that if I meal prep a recipe, it might sit in my fridge and I might also waste hours cooking. Fluffy Vegan Chickpea Flour Pancakes

These chickpea flour pancakes are seriously one of the best things I’ve ever consumed.

My Go-To Chia Pudding

Can I convince you to eat something with beets for breakfast? If it looks like this, absolutely!

I’ve mentioned this before, but my childhood was filled with beets. We would go to the amish market whenever we visited my aunt. My mom would pick up a GALLON of pickled beets. Between the five of us, they lasted MAYBE two weeks.

That always led to some very interesting discussions about number 1 and number 2, if you catch my drift.
