It is hot outside! So let’s uncook everything, shall we?

It just hit 100 degrees here in Philly. The LAST thing I want to eat when it is this hot out is something warm, especially for breakfast. However, this tea infused chia pudding is the one thing I will turn my stove on for because it is just that GOOD.

Don’t worry. It’s only for five minutes.

Simple food means Tamago Egg Sushi Rice Bowls for breakfast or lunch! Pair them with cubed avocado for a delicious and quick meal.

Especially at this point in the quarantine, I am looking for simpler meals. At first, I went all out with some extravagant dinners (and sometimes I still do). But some weeks ago, I discovered that all I want to eat are eggs and rice which might be the most satisfying combo ever. As a kid, I loved tamago, which is an egg sushi. I thought, why not deconstruct it and make some tamago egg sushi rice bowls? And y’all, these babies are freaking DELISH.

So let’s get started shall we?

Best Curried Tofu Scramble

Tofu scramble gets a bad rap, but the best Curried Tofu Scramble is the way to make tofu scramble sound so darn delicious. Tofu is dusted in curry and cumin and crisped up in a cast iron pan. It is the perfect breakfast or lunch for a busy weekday or for weekend brunch!

Tofu scramble used to intimidate me… I know that sounds absolutely ridiculous but hear me out. Tofu is one of those ingredients that I love, but I feel a lot of people are skeptical of the bland taste and funny texture. Therefore, it is up to me to try and convince you that you can make tofu taste delicious. And y’all, this Curried Tofu Scramble might take the cake. It is full of both flavor and crispy bits.

Who doesn’t like crispy goodness?

Peanut Butter Banana Baked Oatmeal

Peanut butter banana baked oatmeal… oh I see you there, ya beauty.

Did ya know peanut butter and banana are probably my favorite flavor combination ever? Seriously I don’t know what could be better duo than that. I have a habit of eating the same things for weeks at a time. Therefore, it should come as absolutely no surprise that I ate a peanut butter and banana sandwich for lunch for a solid year as a kid.

What can I say? The heart wants what it wants.

Fresh tomatoes, roasted red peppers, and bread combined with herbs give you one heck of a fresh summer salad. Top with a poached, soft boiled, or fried egg for the perfect summer lunch or dinner!

Because if there was any day to make a salad that does not seem like a salad, it is today.

We love salads up in here, but, sometimes, you want that salad that is pretending to be something it should be. And a bread salad aka a panzanella definitely fits what we need for quick work week lunches and dins.

It’s a party up in here for sure!

Mexican Street Corn Avocado Toast

We are on a south of the border kick over here.

Seriously, you need to do yourself a favor (or better yet, a f(l)avor) and make these bad boys up. I know y’all might pause at the fact that I am seriously writing up a recipe for avocado toast… but think of this more as a major sign to flavortown.

Oh no… am I turning into Guy Fieri?

Mini Cauliflower Goat Cheese Frittatas

Because we all need to be a bit basic sometimes, ya get me?

There are weeks when my brain is BURSTING with creativity. Like, I need to get these 10 recipe ideas outta me before my brain explodes, kind of creativity. That kind of week means that if I meal prep a recipe, it might sit in my fridge and I might also waste hours cooking. But then there are the weeks when I just need to get delicious food in me and have zero time to spare to even THINK about my next meal.

And for those kind of “brainless” weeks, this recipe is perfect.
