Simple food means Tamago Egg Sushi Rice Bowls for breakfast or lunch! Pair them with cubed avocado for a delicious and quick meal.
Especially at this point in the quarantine, I am looking for simpler meals. At first, I went all out with some extravagant dinners (and sometimes I still do). But some weeks ago, I discovered that all I want to eat are eggs and rice which might be the most satisfying combo ever. As a kid, I loved tamago, which is an egg sushi. I thought, why not deconstruct it and make some tamago egg sushi rice bowls? And y’all, these babies are freaking DELISH.
So let’s get started shall we?

Keeping things comforting, but healthy with these BBQ Chickpea Stuffed Sweet Potatoes. Chickpeas are roasted until crispy and tossed in BBQ sauce. Plus, anything you put inside a sweet potato gets a yes from my dawg!
People ask me all the time what my favorite comfort foods are. The answer I give more often than not is potatoes in all of their forms. When I was a kid, comfort was going through the Wendy’s drive through to get a baked potato with broccoli and cheese. I never like burgers or meat as a kid, and this, to me, was heaven. Now, in these difficult times more than ever, I am leaning on some of my favorite comfort foods. And nothing says comfort like stuffing a sweet potato with all sorts of goodies.
Or maybe that is just me!

It’s spring! Kind of. Which means it is time for salad season!
Here’s the thing, you guys know I do not do boring salads. Like if I’m going to tell you about a salad, you’d better believe it’s going to be GOOD. Especially if it’s a quinoa salad. I refuse to perpetuate a stereotype when it comes to the health food everyone love to HATE.

Getting ready for salad season a little early with this Italian Chickpea Chopped Salad. Chickpeas marinated in a simple vinaigrette take this salad to a whole other level. Serve alongside your favorite Italian dishes or have it straight up for lunch. Simply bomb.com!
By now I think you all know how I feel about salad. Here is the thing: I despise a boring salad (i.e lettuce and very little else). But I LOVE a GOOD salad (i.e one with greens…carbs and cheese). And if it’s a salad where the dressing is truly the star, then you know I am all about it.

This side dish has me WEAK. Sour Cream and Onion Smashed Potatoes are the side dish you never knew you needed!
If my six year old self could see me now, she would be so darn happy to see that I have made my favorite food, sour cream and onion potato chips, into a dinner that our mother would be proud of. Imagine that: eating chips for dinner and having society accept you for it.
Have I said too much?

We have having a major corn moment and I am in total love.
I used to shy away from corn, mostly because my only exposure to it was the frozen stuff my aunt would serve her kids at daycare. It was way too sweet, way too starchy, and had zero flavor. There are some veggies that I am totally for eating frozen, but corn just is not it. But, now that it’s summer and we have full exposure to the stuff on the cob, I am absolutely in LOVE with adding corn to absolutely everything in a way I never desired before.
Sorry if I’m getting too corny for ya.

Because if there was any day to make a salad that does not seem like a salad, it is today.
We love salads up in here, but, sometimes, you want that salad that is pretending to be something it should be. And a bread salad aka a panzanella definitely fits what we need for quick work week lunches and dins.
It’s a party up in here for sure!

It’s salad season! Huzzah.
Actually, if I am being COMPLETELY honest, the last thing I want to do this time of year is cook and this recipe has been a long time coming because I usually make it once a week every week during the summer. It has all my fav things and comes together in 30 minutes with MINIMAL cooking.
So who’s with me?! Let’s not cook together!

It’s a fiesta over here!
I know kale always gets the short end of the stick in the “food” world. First, she was a garnish. Then, she was the ridicule of health food world. BUT, y’all, if you think you don’t like kale salads, then you haven’t LIVED until you tried marinating it in lime juice and lots of spice.
Trust me… I will convert you. That didn’t sound sketchy at all.
