By now I think you all know how I feel about salad. Here is the thing: I despise a boring salad (i.e lettuce and very little else). But I LOVE a GOOD salad (i.e one with greens…carbs and cheese). And if it’s a salad where the dressing is truly the star, then you know I am all about it.

Honey Sesame Roasted Chickpeas are the perfect healthy way to start 2020. Make them at the beginning of the week for the most delicious snack, protein source, or salad topper you have ever had!
2020 is definitely the year of the chickpea. Or at least that is what I am declaring!
The new year always brings with it a tinge of diet culture. However, cutting foods out is not the way that I like to roll. It makes eating a balanced diet feel like a chore. Instead, I always approach the new year with ideas to ADD more foods: more veggies, more fruits!
And yes, let’s add more chickpeas

Everyone needs a good salad for the summer season. Because summer salads >>>>.
Ya know back in the winter when all I wanted was soups, stews, and cozy pots of things that are supposed to build up my winter reserves? For me, all of that goes out the window the second it turns to 65 degrees. And this… this might be the most delicious, flavorful chickpea salad to ever come out of my brain.
How I found it in there, I have zero clue.

Oh hey, look, another chickpea recipe!
And it’s a recipe that just screams summer, which we all need right now because Monday is not the most summer-y day of the week. Ok ok, for real though, I feel like Mondays just require fun food, you know? Just something to push us into the thralls of the week ahead. Especially after testing some pretty dicey mango recipes yesterday and feeling like I had the ultimate sugar rush.
One might say I’m part mango now.

Oh my just LOOK at this setup.
If you have been following me on Instagram or reading my recipes, I think y’all recognize that I LOVE me a good stew. Even in the summer, when everyone else just wants salad or some grilled chicken, I say bring on those roasty toasty kind of meals. Those meals that taste good sitting in fridge for a couple of days, the spices all mulling about for and playing off of each other. Those meals where you enjoy them more sitting in your leggings crossed legged on the couch with your fav blanket. Oh yeah.
It gets me tickled just THINKING about it.

What a way to wake your tastebuds. I swear. Fries before lies!
Ok maybe I am being a leetle bit dramatic, but these fries are where it is at! Over the past couple of months, I have made sweet potato fries religiously during my weekly meal prep. They are so easy and, I think, for the amount of time you put into them, they are worth WAY more than the sum of their parts.
That is like all of my favorite things. Work hard(ly), play hard. That’s what the phrase is, right?

Have you honestly ever seen such a pretty salad?
It is safe to say that, even as a small child, I was obsessed with color. I know black is that color that is supposed to make you feel sleek and confident (or is that white?). I don’t know, but what I can tell you is, even now, the more neon the better. Even now, I will put a splash of neon on everything. That highlighter yellow color that many describe as “putrid”? Yup that is my favorite. I swear, I cannot resist buying anything that color.
But y’all already knew that.

The title of this recipe is totally misleading.
Honestly, you could eat these tostadas any time of day. Actually I prefer to have stuff with fried eggs on it for lunch. Since starting a new job and whatnot, I have been trying to figure out what types of lunches I can bring with me that will actually hold up for a couple of hours in the fridge. I was totally spoiled in my last job because I was able to go home and make lunch.
Now, I start the crusade against the not sad desk lunch.
